Rep Power: 10 ![]() ![]() | Turkey Chipotle Chili This is a recipe from my best friend in the world, Racheal Ray. It has wonderful flavor, and the cooking time is around 30-40 minutes; it's quick and easy. Ingredients: -1 lb. ground turkey -28oz can diced stewed tomatoes (I usually buy the Mexican Recipe can) -2 cans red kidney beans, drained -1 or 2 chipotle peppers in adobo, chopped -1 large onion (chopped) -2 or 3 garlic cloves (finely chopped) -3 cans chicken stock -1 tbsp vegetable oil -salt and pepper, cayenne pepper, and chipotle powder to taste Heat oil in large pot over med-high heat. Brown turkey. Add onions, garlic, and chipotle peppers. Cook for 5 minutes, while stirring. Stir in tomatoes and beans. Add chicken stock and bring to a slow boil, for about 10 or 15 minutes. The chili will be slightly thin, so I cheat by adding Wondra to thicken it up. As always, season with salt and pepper, cayenne, or chipotle powder. Serve chili topped with shredded pepperjack cheese. |
