Rep Power: 46 ![]() ![]() ![]() | Green Beans with Sour Cream Sauce 4 to 5 cups cut green beans 2 tablespoons finely chopped onion 1/4 cup chopped fresh parsley 3 tablespoons butter 1/4 cup flour 1 cup liquid from beans salt 2 teaspoons sugar 3 tablespoons vinegar 1 cup sour cream PREPARATION: Cook green beans in boiling salted water until tender. Drain, reserving 1 cup of the cooking liquid. In a saucepan, heat butter over low heat; add onion and parsley and sauté until tender. Blend in flour; stir, adding reserved 1 cup liquid from beans, salt, sugar, and vinegar. Add beans and heat through. Just before serving add sour cream. Heat just until hot; do not boil. Serves 6. |
