Spicy Tofu Burgers

1 (10-ounce) package firm tofu

2 large sandwich rolls

2 tablespoons butter, at room temperature

2 teaspoons garlic powder

cup light soy sauce

2 tablespoons sesame seeds

1 tablespoon hot red pepper flakes

2 tablespoons ketchup

2 tablespoons mayonnaise

1 tablespoon hoisin sauce

teaspoon Tabasco sauce, or to taste

1 small red onion, thinly sliced

4 leaves of iceberg lettuce

Remove the tofu from its package and pat dry. Slice into 4 patties, each approximately 1/2-inch thick.

Halve the sandwich rolls. Butter each half, then season with the garlic powder. Place the rolls under the broiler to brown slightly, about 3 minutes, depending on broiler temperature. Remove the rolls and set in a warm place.

Sprinkle soy sauce over the tofu slices, then sprinkle with the sesame seeds, turning to cover both sides of the tofu.

Heat a large nonstick skillet over medium heat. Gently place the tofu slices in the pan and cook for 4 minutes. Turn the slices and sprinkle with the red pepper flakes.

Cook for 3 to 4 minutes, until the patties are heated through.

While the tofu is cooking, mix together the ketchup, mayonnaise, hoisin sauce and Tabasco.

Remove the tofu from the pan with a slotted spatula, and place 2 slices on the bottom half of each roll.

For each sandwich, layer 5 or 6 onion rings and 2 lettuce leaves. Spread about 2 tablespoons of the ketchup mixture on the top half of each roll and complete the assembly of the sandwich.

Slice sandwiches in half and serve warm.

Makes 2 servings.
