Grilled Salmon with Lemony Miso Glaze

4 salmon filets, skin on (6 oz. each)
1.5 sticks butter or margarine
2 TBSP miso paste
1 TBSP light soy sauce
3 TBSP lemon juice
3-4 TBSP Tony Chachere's seasoning
extra-virgin olive oil
salt and pepper

Gently rinse filets in cool water; pat dry. Drizzle oil onto filets, and season with Tony's, salt, and pepper. Set aside.

Heat butter or margarine in small pan, add miso and soy sauce, and lemon juice, and whisk until evenly blended. Remove from heat and cool to room temp. When sauce has cooled, pour half over salmon filets, cover, and refrigerate for 30 minutes. Sauce will thicken into a paste.

Meanwhile, heat grill to medium heat. Brush oil onto grate to keep salmon from sticking.

Place salmon on grill, skin-side down, and grill for 4 to 5 minutes. Rotate 45 degrees, and grill an additional 2 minutes, all while drizzling remaining sauce mixture onto filets. Skin should be crispy. Carefully flip filets, and grill for 2-5 minutes, depending on preferred doneness. Salmon will continue to cook after removing from grill. Drizzle 1-2 TBSP of remaining sauce onto filets. Serve immediately.

I concocted this recipe last night, and it turned out to be delicious.
